Hi friends, carrot beans poriyal/stir fry is very authentic in South Indian home. Here, I added chopped potatoes with the veggies to make colorful and healthy stir fry. I already posted carrot beans stir fry, and add of potato to give unique taste and the combo suits well with dal and rasam rice.

For past one week, I had demand of recipes, so I prepare simple recipes on morning and posting on the same day. And today, I was thinking what should post today, and prepared the three veg stir fry.

INGREDIENTS
Carrot – 1 Large, peeled and chopped
French beans – 10, chopped
Potato – 1 Large, peeled and chopped
Canola Oil – 1 Tbsp
Cumin seeds – 1 Tsp  
Mustard seeds – 1 Tsp
Urad dal – 1 Tsp  
Garlic – 6, chopped
Green chillies – 1, chopped
Curry leaves – Few
Kuzhambu chilli powder – 1 Tsp  
Fennel seed powder – ½ Tsp
Salt – To taste

METHOD
  • Heat oil in pan; add cumin seeds then mustard and urad dal wait for sputter.
  • Add garlic and green chillies sauté it till the raw smell goes.
  • Add curry leaves carrot, beans and potato and then salt sauté it 2 minutes on medium flame then keep the flame on low level and cover the pan with lid.

  • Allow cooking for 5 minutes; now add chilli powder and fennel seed powder and sauté it till the raw smell goes.
  • Switch off the flame and serve it…

NOTE
  • You can add separate red chilli powder and coriander powder instead of kuzhambu chilli powder.
  • If you like shallots, add while saute garlic.
  • Add of grated coconut will enhance the taste.
