Ada pradhaman is popular kerala payasam/kheer, which is mainly prepared with jaggery and fresh coconut milk. The ada is made up of rice and you can make it in home or use store-bought ada. This time I tried with store-bought ada, double horse brand. I planned to make homemade ada too, later you can expect the homemade ada from VUV…

INGREDIENTS

Rice ada – ½ Cup  

Water – 3 Cup + 2 Tbsp

Jaggery – 1 Cup

Thin coconut milk – 1 Cup  

Thick coconut milk – ½ Cup

Cardamom powder – ½ Tsp

Ghee – 1 Tbsp

Cashew nuts – 10-12

METHOD
  • Boil 3 cups of water till high boiling point and switch off the flame.
  • Add rice ada to the hot water and cover it for 30 minutes, let it soak.
  • Drain the ada from the hot water. Now it will be very soft.
  • In pan add the grated jagggery with 2 Tbsp. water and melt the syrup completely.

  • Filter the jaggery syrup into other pan, and boil it till it gets thicken, and then add the drained ada to the syrup and mix it once and keep the flame on low.
  • Add cardamom powder and thin coconut milk and allow cooking for 10 minutes and then switch off the flame. It will thicken now.

  • Meanwhile ghee roasts the cashew nuts.
  • Add thick coconut milk to the pradhaman and add roasted cashew nuts with ghee, stir it once.
  • Serve it hot…

NOTE
  • The color of the pradhaman is depends upon jiggery color. I used light color jaggery so the pradhaman looks light color.
  • To get thick color, use dark jiggery.
