COCONUT CHUTNEY


Sometimes we don’t have time or feel tired to make side dishes for idli/dosa.  That time coconut only strikes out in mind... Right? Coconut will help us a lot and this is our favorite too…. In all functions of our state and hotels we can taste this coconut chutney!!  My mom used to grind this coconut chutney in Stone and Muller (we called AMMI in tamil), its taste entirely different from mixie grinding.... you too try this...



INGREDIENTS 
Coconut grated - 1/2 cup 
Fried gram (pottu kadalai) - 1/2 cup
Green chillies - 4
Garlic pods - 4-5
Salt - to taste
Curry leaves - 2 or 3 sticks of leaves (i used dried) 
Water - to grind
Oil - 2 tsp
Musturd - 1 tsp
Urad dal - 1 tsp



METHOD
  • Grind coconut, fried gram, green chillies, garlic pods, curryleaves, salt with water.







  • After grinding change into a bowl.

  • Heat oil in pan add musturd and urad dal after splutter switch off flame.

  • pour this into the chutney bowl mix well  and serve with idli/dosa.

TASTY COCONUT CHUTNEY IS READY!!!

SPICY POTATO FRIED RICE


Hi, Today i came with somewhat interesting recipe... That is spicy potato fried rice.... Yes!!! Usually we use potatoes to make samosa, cutlet and kurma etc... But rarely we will do this rice recipes... Nobody will hate potatoes in any dish and especially spicy one... Right!!! You can make this rice for dinner using left over rice too!! You will try out and tell me!!!





INGREDIENTS

Cooked rice - 1 cup 
Potatoes - 2 chopped 
Oil - 4 tsp 
Fennel seeds - 1 tsp 
Big onion - 1 finely chopped 
Garlic - 10 pods crushed
Tomato - 1 finely chopped
Chilli powder - 1 tsp 
Coriander powder - 1 tsp 
Curry masal powder - 3/4 tsp 
Red chilli sauce - 1 tsp 
Soy sauce - 1 tsp 
Salt - to taste




METHOD

  • First wash potato and chopped with skin and add 1 tsp of oil and salt mix well. Keep it in MW oven for 10 minutes( Using less oil we can cook potato).



















  • In a kadai heat oil, add fennel seeds and its splutter.


  • Add chopped onion fry for few seconds, add crushed garlic and fry till golden brown.


















  • Add in tomatoes fry for 2 minutes.


  • Add MW boiled potato and stir well for few minutes.




  • Add all powder spices and mix well.



  • Now add red chilli sauce and soy sauce stir well.



















  • Now add rice and mix well till everything is combined.




















  • Garnish with coriander leaves and serve spicy potato fried rice.

PROTEIN BIRIYANI/RICE

Hi, today i came with biriyani.... Yes!!! But not with vegetable its full of beans (butter and soya beans)... Beans having high protein values... it comes out well with spicy and flavorful biriyani.... and kids will like this.. which is very simple and easy to prepare for lunch box too!!! Are you going to try it??????




INGREDIENTS

Rice - 1 cup
Oil - 2 Tbsp
Fennel seeds - 1 tsp
Onion crushed - 1 cup (i used mortar n pestle to crush)
Ginger  garlic crushed - 1/2 cup
Green chilies - 4
Coriander leaves - 1/2 cup
Mint leaves - 1/2 cup
Butter and Soya beans - 1 cup
Biriyani masala powder - 2 1/2 tsp
Salt - to taste

Water - 3 cup




METHOD

  • First wash and soak the rice for 30 minutes. 


  • Heat a heavy bottom pan, add oil and add fennel seeds till it splutter.

  • Then add crushed onion and fry them till golden brown.


  • Add crushed ginger garlic and add green chilies fry till raw smell goes.










  • Now add coriander and mint leaves mix well.
  • Add butter and soya beans stir fry for few minutes.











  • Then add salt and biriyani masala powder and fry till the oil separates from the mixture.












  • Now add 3 cup of water and let it boil and cover. When it starts boil with high bubbles add rice mix well.










  • When it starts bubbling keep the stove on low flame.
  • Let it cook well, when the water fully absorbed off the flame and put it  on 'DUM' (as shown in pic.)

  • Stand for 15 minutes in this stage and mix well.


  • Now its ready to have.....

MICROWAVE DOSA

Hi i told about making dosa in microwave oven..... yes!!! with less oil we can make dosa in microwave dosa pan..... try out in your home too...

INGREDIENTS 

Idli batter - to make dosa
Oil - few drops

METHOD

  • Just sprinkle a few drops of oil in microwave dosa pan and pour idli batter to it and spread it.

















  • Keep it in oven set with high temperature for 2.30-3 min. (according to your batter thickness).













  • Now take the dosa and transfer into serving plate.... and its ready...
