ONION ROAST

Hi friends, Oops! In Tamil Nadu power cut is playing in full mode... Couldn't do anything, OK! dears... Today I posting simple dosa variety... It is Onion Roast, yeah! I know all of you like onion roast n surely you order or make prepare it once in your life time, am Right? Very simple but very flavorful yummy roast, is it? Now let move on to our recipe, 


INGREDIENTS
Dosa batter - need for 2 dosa
Onion - 1 finely chopped
Oil - to drizzle for dosa



METHOD

  • Heat the dosa tawa and spread dosa batter on the tawa.














  • Spread onions on the dosa and drizzle oil on it and cover with lid.






















  • When its cooked flip over the dosa for few minutes to fry onions.



















  • Take it from tawa serve hot with chutney or kurma.





HAVE THE ONION ROAST!!!

TOMATO PODI PULAO (NO ONION)

Hi my dear friends, hope all Kerala   friends celebrated well Onam festival... Well!!! Today I posting tomato podi rice which is very easy to prepare in quick time with very few ingredients and no need onion and garlic too. But the taste is fabulous, I learnt it from my sister Nathiya, its her MIL's recipe... Kids will love the rice and perfect for lunch box too when you get up late... You too try this and let me know...





INGREDIENTS
Cooked rice - 1 cup
Oil - 2 tsp
Mustard seeds - 1 tsp
Fennel seeds - 1 tsp
Cumin seeds - 1 tsp
Hing - 1/2 tsp
Tomatoes - 3 or tomato puree 
Red chilli powder - 1/4 tsp
Idli podi - 1/2 Tbsp 
Salt - to taste




METHOD 

  • First make the tomatoes into puree or you can use ready tomato puree.
  • I prepared puree mashed by hand because when I prepare the rice no power supply :-(














  • Now heat oil in a pan, add fennel seeds, cumin seeds and mustard seeds wait it for splutter and add hing.





  • Now add tomato puree with salt to this and fry well.










  • Now add red chilli powder mix and fry well till oil separates from the gravy.



  • Next keep the flame on low add Idli podi mix well and switch off the flame.



  • Now add cooked rice and mix well and serve hot with papad or potato fry.

ALOO KURMA/POTATO KURMA

With the celebration of this Onam, today I posting Potato Kurma... Yes! our favorite potato, its very spicy and delicious one... you too try this friends...


INGREDIENTS
Potato - 2 big
Oil - 2 tsp
Cinnamon 1" inch- 2
Cloves - 1
Cardamom - 1
Fennel seeds - 1 tsp
Mustard seeds - 1 tsp
Urad dal - 1 tsp
Onion - 1 cup chopped
Ginger garlic paste - 3 tsp
Tomatoes - 3 chopped
Mint leaves - few
Curry leaves - 1 stick
Coriander leaves - few
Grated coconut - 1/2 cup
Turmeric powder - 1/2 tsp
Red chilli powder - 1 tsp
Coriander powder - 1 tsp
Curry masala powder - 1 tsp
Salt - to taste
Water - to boil potato & for kurma



























METHOD

  • First grind coconut with water into fine mix and keep aside.










  • Next wash and peel the potatoes, chopped it and boil with water and salt in oven for 12 minutes.
  • Take the boiled water separately for later use.  









  • Now heat oil in a pan add cinnamon, cloves, cardamom, fennel seeds, mustard seeds and urad dal wait it for splutter.



















  • Now add chopped onions and ginger garlic paste fry well till aroma comes.



















  • Now add chopped tomatoes with  turmeric and salt fry till mushy.

































  • Next add mint and curry leaves fry well.












  • Now add all spice powder with salt and fry well.





















  • Now add boiled potatoes and mix well and add potato boiled water mix well let it boil.






















  • Now add coconut paste mix well let it boil for 1-2 minutes and garnish with coriander leaves.
































  • Now serve hot with roti/hot rice.






HAVE IT WITH HOT RICE!!!
