Hi friends, Today I posting Kurma... Yes! vegetable kurma is most authentic and which is so opted for roti, poori and hot rice... This gives very flavorful and good taste...N this is our family favorite kurma...
INTRODUCTION
Kurma or korma which is derived from Turkish word, and it is Mughalai cuisine and it can be made with yogurt, cream, nuts and seed paste or coconut.

INGREDIENTS
Oil - 3 Tsp
Fennel seeds - 1 Tsp
Mustard and urad dal - 2 tsp
Onion - 1 chopped
Carrot Medium - 2 chopped lengthwise
Cauliflower Medium - 1 cup florets
Green bell pepper - 1 chopped lengthwise
Chilli Powder - 1 Tsp
Coriander powder - 2 Tsp
Curry masal powder - 1 Tsp
Salt - to taste
Water - as required for kurma
To Grind
Oil - 1 Tsp
Fennel seeds - 1 Tsp
Shallots - 15
Garlic - 6-7 pods
Ginger - 1" Inch
Tomato - 2 chopped
Green chillies - 2
Coconut flakes - 10-12
Poppy Seeds(Roasted n ground) - 2 Tsp
TO GRIND |
METHOD
- First fry all the items under the grind column except coconut and switch off the flame then add coconut mix well.

- Cool the mixture and grind it little water.
- Before proceed with tempering put all the vegetable in MW proof Bowl with water and salt cook in MW for 5-7 Minutes (Optional).
- Heat oil in a pan add fennel seeds and mustard urad dal seeds wait it for splutter.

- Next add Onion fry well then add the cooked vegetable mixture fry for 1 minute or if you using raw vegetables fry for 5-6 minutes.
- Add chilli powder, coriander powder and curry masal powder with salt fry for 3 minutes.
- Next add the ground paste to the mixture with required water cover with lid and cook it for 10-15 minutes.
- Switch off the flame and garnish with coriander leaves.
- Serve hot with chapathi, poori and rice.
