Hi friends, yet 2 more days for diwali... I can see everywhere full of diwali sweets and savouries. And in my place fire crackers sounds too started... But nowadays am not interested on fire crackers. In our place, the streets are loaded with crowds, mini platform shops, mobile shops and corner of my street is fully rush because of 3-4 oil shops are there.

WHOLE WHEAT HALWA I KOTHUMAI HALWA I TRADITIONAL WHEAT HALWA I DIWALI SWEETS
Hi friends, actually
this is my old post which I was posted the recipe in the beginning of my
blog... So most of you did not noticed the recipe... and now festival time so
am repost the traditional way of making wheat halwa from wheat berries. It’s
really useful for your diwali preparations.
The wheat
halwa is prepared from “Samba Muzhu Kothumai”, (Whole wheat berries). The process
of making in traditional way is soaking the wheat berries for overnight and
extracts the milk from it and allow for overnight fermentation then they will
follow the cooking process, this is the way of getting traditional taste halwa.
But the fermentation is optional; we can continue the process without
fermentation.

INGREDIENTS
Samba whole wheat - 1 cup
Sugar - 2 cups
Water - 2 cups
Cardamom pods – 6 or powder – 2 Tsp
Ghee - 3 Tbsp
Orange food color – 1/8 Tsp
Salt – 1/8 Tsp
METHOD
- Wash and soak the samba whole wheat for overnight.

- Drain the water and wash again and grind in a mixie by adding 1 cup of water. Strain through a sieve to get thick milk.
- Again grind with 1 cup of water and
strain. Now you have only husk, throw it away.

- The filtered wheat milk is ready. Keep this in refrigerator for 2 hours to settle down thick milk.
- Discard the upper layer of water and keep the thick milk.
- Now prepare the sugar syrup. Take heavy bottom pans add 2 cups of sugar and 1 cup of water and stir in low flame.
- Grease the plate with ghee.
- When it starts bubbling stir continuously and check it for single strand consistency.
- When sugar syrup is ready add wheat milk with pinch of salt and stir continuously.
- Then add color powder with some water and stir well.
- Add cardamom powder to this and stir well till it forms a mass.
- Adding ghee and don't leave your stirring otherwise lumps will appear.
- Should be stir in low flame around 30-40 min, then only we will get good consistency.
- Check this consistency by rolling the mixture in your hand like ball; if it will not sticky it’s ready.
- Pour the whole mixture on to a plate. Let it cool, cut into desired shapes.
- Serve it…
NOTE
- Single thread sugar syrup consistency is very important for good halwa texture.
- Food color is optional.
- If you wish add ghee roasted cashew nuts to the halwa in last stage and stir it well.

PINK CASHEW PEDA I KAJU STRAWBERRY PEDA I DIWALI SWEETS
Hi friends, here is
my another sweet treat for you all for the diwali. I wish to make kaju katli,
but I made the kaju peda… Actually, I try to grind the cashews in my small
mixie jar but unexpectedly, it got repair so grind it with other jar but I get
coarse powder only. Like this, I made the yummy cashew peda and it’s so
wonderful in taste and nutty flavor I already made KAJU FLOWER and ROSE FLAVORED KAJU MILK ROLL for last
diwali, it will be so colorful and you will love it...

from Aval Vikatan. Yes! I love Aval Vikatan, my mom used to get Aval vikatan
for these supplementary only... But didn’t make any dishes from there:P she
just read like story books... But now its useful to me, which is contains

DARK DATES CHOCO CAKE - EGG FREE BUTTER FREE
Hi dear friends, for
past one week I didn't cook anything for my blog, as am posting these recipes
from my drafts... I wish to post the dark dates cake for long time but I forgot to share. As
many of my friends and regular readers knows that am poor eater as I already
said in my posts. So nowadays my mind insisted to have healthy items, and now
hearing the voice of my mind and obey its order..;) I tasted the dates once or

Hi dear friends, today
very simple yet unique and delicious healthy upma... we all had rava upma,
arisi upma, idli upma like that, but did you tried or tasted ragi(fingermillet)
flour upma.. Yes! In ragi flour we can made delicious upma and its my favourite
upma too. Photos are not satisfaction of the upma, will upload good photos soon... :)
The upma was I learnt
from my neighbour and my mom gave a try once, we love the upma and started to
add the upma in our frequent menu. Am sure you will love this upma, try once
and let me know your feedback. In the same way you can make in wheat flour too
to make wheat flour upma...

HOMEMADE DRY CURRY LEAVES & DRY FENUGREEK(METHI) LEAVES
Hi dear friends, last
two Saturday’s am posting basic recipes, so I thought that hereafter I will
post basic recipe on Saturdays, I don’t know whether its possible on every
week, but I will post my level best...
Today’s post is not a
recipe, which is very easy to use and healthy supplementary when we don’t have,
or not available the fresh one of these ingredients...
We used to keep stock
of the dry curry leaves, as its very handy too temper chutneys, making of idli
podies and other recipes. Likewise, dry methi leaves is also very handy which
is used in dal, sambhar and other gravies too.
You can prepare these
leaves in a jiffy and can store it in dry air-tight container for long time as
it has long shelf life.

INGREDIENTS
Curry leaves – 1
Bunch
Methi leaves – 1

METHOD
- Pick the leaves from the stem and keep it in a bowl.
- Wash the leaves with 2-3 times with water in floating water or running tap water.
- Drain it and keep it in microwave plate and spread it as shown in the picture.
- Microwave high (100 P) for 8-10 minutes.
- If you touch the leaves it will be crisp or keep it again for 1-2 minutes, not more than that, else it will burn.
- Cool it and store it in air-tight container.
