Hi friends, am slowly back up to my blogging, soon will come to my routine... After long time, I have prepared the yummy cookies for HBC-Home Baker’s Challenge. Am so sorry HBC hosts and +Priya aks for not participating some previous challenges. +Rafeeda AR from The Big Sweet Tooth is the May month host, she have suggested varieties of Arabic bakes which all are interesting and new to me. I wish to bake all recipes of the list, but some of the ingredients not available in my place so, I have chosen sesame cookies out of 6 collections such as,
- Spinach Fatayer
- Manakish Zaatar
- Mushroom Spinach Cigars
- Umm Ali Egyptian Dessert
- Arabic Date and Honey Cake
- Crunchy Sesame Cookies
The cookies taste very well with flavor of sesame seeds. I baked egg-free sesame cookies and I used Nutralite fat spread instead of butter but no compromise in taste. :)

INGREDIENTS
All Purpose flour - 1/2 Cup + 1 Tbsp
Baking powder - 1/2 Tsp
Baking soda - 1/4 Tsp
Salt - A pinch
Nutralite Spread - 2 Tbsp
Sugar, powdered - 2 1/2 Tbsp
Vanilla essence - 1/4 Tsp
Luke warm milk - 2-3 Tbsp (depend on the dough consistency)
Roasted sesame seeds - 1/2 Cup
METHOD
NOTE
Baking soda - 1/4 Tsp
Salt - A pinch
Nutralite Spread - 2 Tbsp
Sugar, powdered - 2 1/2 Tbsp
Vanilla essence - 1/4 Tsp
Luke warm milk - 2-3 Tbsp (depend on the dough consistency)
Roasted sesame seeds - 1/2 Cup
METHOD
- Sieve the APF, baking powder, baking soda and salt and keep it aside.
- Preheat the oven @ 180˚C for 10 minutes.
- Take a mixing bowl, add nutralite and sugar beat it well till creamy.
- Add vanilla essence and mix it well then add flour mixture and mix it well.
- Now sprinkle milk little by little and knead the dough like chapathi dough consistency.
- Now divide the dough into equal balls and press the balls into disc between your palms.
- Coat the discs with sesame seeds both all the sides and keep it in greased and dusted baking pan or cookie sheet.
- Bake it for 14-16 minutes and take it off from the oven.
- Cool it completely and serve it...
NOTE
- You can add butter instead of Nutralite.
