INGREDIENTS
Cooked rice – 2 Cups
Oil – 2 Tbsp
Cinnamon – 1” piece – 1
Cloves – 2
Cardamom – 2, broken
Chana dal – 1 Tbsp
Peanuts – 1 Tbsp
Mustard seeds – 1 Tsp
Urad dal – 1 Tsp
Dry red chilies – 2, broken
Hing – ¼ Tsp
Green chillies - 1
Ginger – 2 Tsp, finely chopped
Curry leaves – Few
Mint leaves – Few
Coconut, scraped – 1 Cup
Salt – To taste
METHOD
- Heat oil in a pan; add cinnamon, cloves, cardamom and then add chana dal, peanuts, mustard seeds, urad dal, hing and dry chillies wait for golden brown.
- Now add ginger, green chilies, curry leaves and mint saute it till the raw smell goes off.
- Then add scraped coconut to the mixture, saute it for 2 minutes, but do not saute till brown, just saute it till the coconut flavor comes from it.
- Add cooked rice to the mixture and mix it till combined well and switch off the flame.
- Serve it hot with potato roast…
