Vegetable Kadai which is great delicious and tempting our tummy... Its goes
well with chapathi,naan and other roti varieties...
NEEDS OF INGREDIENTS
Oil -4tsp
Fennel seeds - 1 tsp
Ginger Garlic paste - 1 tbsp
Tomato Puree - 2 cups
Carrots, cut into 1” pieces - 1/2 cup
Green beans, cut 1” pieces - 1/2 cup
Cauliflower florets - 1/2 cup
Onion, cut into squares - 2
Capsicum, cut into 1” pieces - 1
Green peas - 1/2 cup
Chilli powder - 1 1/2 tsp
Corriander powder - 1 tsp
Garam masala - 1 tsp
Corn flour - 1 tsp
Some onion and capsicum fried in oil - garnish
Coriander leaves - to garnish
Water - 1 Cup
Salt - to taste

METHOD
- Heat oil in a deep pan. Add the
fennel seeds. When it begins to splutter, add
the squared onions.Saute till onions brown.
- Add the ginger garlic paste and
saute for a few minutes.Add the vegetables – carrots, green beans,
cauliflower florets and green peas.
- Add chilli powder, coriander
powder and garam masala. Fry till aromo comes, for 4 minutes.
- Now add the tomato puree and
water. Bring to a simmering boil.Add salt to taste.
- Reduce the flame, cover and
cook for 10 minutes, till all the vegetables are cooked well.
- Pour corn flour with some water
to it. It will become creamy. Boil for some times till its thicken.
- Garnish with coriander leaves
and serve hot with chapathi.
