Rice flour - 2 Cup
Boiled Water - As required to Knead
Salt - 3/4 Tsp

Little About Idiyappam/String Hoppers
Idiyappam or string hoppers is a traditional Kerala, Tamil and Sri lankan food consisting of rice flour pressed into noodle form and then steamed. It is culinary speciality in Tamil Nadu, Kerala and coastal areas of Karnataka. It is also a culinary specialty in Sri lanka. It is made of rice flour or wheat flour, salt and water. It is genearally served as the main course at breakfast or dinner together with a curry and coconut chutney. It is also served with sweetened coconut milk in the Malabar region of Kerala.

INGREDIENTS
Rice flour - 2 Cup
Boiled Water - As required to Knead
Salt - 3/4 Tsp
To Serving
Coconut milk - 3 Cup
METHOD
- Take a wide vessel and add the rice flour, salt and mix it once.
- Now add hot water mix it well by spatula to bring very soft dough like poori dough consistency.
- Now keep ready your idiyappam maker (I used wooden press) and idli plates with clothes or greased with oil and idli cooker.
- Fill the dough on to a idiyappam maker and squeeze it on to the idli plates and steam for 10 minutes on low flame.
- Allow to cool and remove from the idli plate and serve hot with coconut milk or any curries...

NOTES
- Make sure that u having boiled hot water to knead otherwise the dough will be brittle.
- Keep the idli plate only one for steaming, if you keep all the trays into the cooker the steam water will leave in the lower plate and it will turn into mushy.
