Onam is a festival celebrated by the
people of Kerala. Usually, Onam will be celebrated for ten days with lots of
cultural functions. When I studied in hostel, my mallu friends used to
celebrate onam festival with us. They put pookolam (floral carpet), and then do
dance with their traditional sandal saree. This year onam falls on 7th
September.
I would like to treat and wish my
malayalee friends and readers with some recipes; I do not have much time, so I could
do only three recipes on this year. The first recipe of onam special is
Arachuvitta sambhar. Its traditional recipe in Kerala with freshly ground
spices with their god’s gift coconut…J I couldn’t see their recipes without coconut.
Arachuvitta Sambhar (lentil gravy with
freshly ground spices), is very aromatic and tasty. I heard about the sambhar
after coming into the blog world. But I had tasted unniyappam and other some
sweet recipes, especially nenthram chips…

INGREDIENTS
Toor dal – ½ Cup
Turmeric powder – 1 Tsp
Castor oil – ½ Tsp
Water – 2.5 Cup
To roast and grind
Oil – 2 Tsp
Coriander seeds – 1 Tbsp + 2 Tsp
Dry red chillies – 5-6
Fenugreek – ½ Tsp
Rice – ½ Tsp
Chana dal – 2 Tbsp
Coconut, chopped – 2 Tbsp
Radish – 1, wash, peels and sliced
Drumsticks – 1, chopped
Ghee – 2 Tsp
Oil – 2 Tsp
Fenugreek – ½ Tsp
Mustard seeds – 1 Tsp
Urad dal – 1 Tsp
Cumin seeds – 2 Tsp
Hing – ½ Tsp
Dry red chillies – 1, broken
Shallots – 6-8
Green chillies – 2, broken
Curry leaves – Few
Tomatoes – 2, chopped
Salt – To taste
Tamarind – Gooseberry size
Coriander leaves – Few
METHOD
- Pressure cook dal with turmeric and oil in 2.5 cups of water up to 3 whistles and keep it aside.
- Add 1 Tsp oil in pan, sauté the sliced radish till turns golden brown and keep it aside.
- Add 1 Tsp oil in pan, add the coriander leaves, dry red chillies, fenugreek, rice, chana dal and coconut roast it till the aroma comes and cool it completely.
- Grind the masala with little water and make smooth paste.
- Now heat ghee and oil in pan, add the seasoning ingredients from fenugreek to dry chillies wait until it sputter.
- Add shallots and curry leaves sauté it till transparent.
- Now add drumstick sauté it for 5 minutes and then add radish and tomatoes with little salt and sauté it till the tomato mushy.
- Then, add masala paste and add dal water from cooked dal, tamarind water and allow boiling and the keep the flame on low.
- Allow cooking till the vegetables cook well, then add mashed dal to the mixture.
- Sprinkle coriander leaves and switch off the flame.
- Serve hot with hot rice and potato chips or potato fry.
super flavorul and yummy sambar, i love this sambar a lot...my neighbor maami makes the best arachuvitta sambar, then stir frying raddish is new to me...we usually add the chopped/sliced pieces directly to the sambar/kootu :)
