EGG LESS OATS CHOCOLATE NUTELLA BISCOTTI - 300TH POST

Hi friends, today am very happy to post here and successfully am posting 300th post. My blog 1.5 years old yet its too late to reach here. But very happy to touch here and healthily survive here with a lot of good friends through the blog baby. Thank you so much for all your supports, love and encouragements. Wish to continue forever. 



Coming to the recipe, actually for past few days I was thinking what to make for 300th, thought to prepare some sweets but after immediate diwali, no one wants sweets... So next option is bakes, and its too sweet, isn't? Finally, I prepared the chocolate oats biscotti.



The biscotti recipe was suggested by +Priya  akka in Home Baker’s Challenge - HBC. She had given different varieties of biscotti and I chosen Egg less Oats Chocolate Biscotti. For past few HBC’s I couldn't make, so I do not wish to miss this month. I followed the exact method but I baked half quantity and used Nutella in place of melted chocolate. It was come out well.


Biscotti
Biscotti is the plural form of biscotto. The word originates from the latin word biscoctus, meaning "twice-cooked/baked". It defined oven baked goods that were twice, so they were very dry and could be stored for long periods of time (Wiki).

INGREDIENTS
Sugar – ¼ Cup
Unsalted soften butter – ¼ Cup
Nutella – 2 Tbsp
Vanilla Essence – ½ Tsp 
Maida/APF – ¾ Cup
Oats – ¼ Cup
Coco powder – ½ Tbsp
Baking powder – ½ Tsp
Baking soda – ¼ Tsp
Salt – Pinch
Choco chips – 1 Tbsp


METHOD
  • Take a wide mixing bowl, beat butter and sugar together till fluffy.
  • Add Nutella and vanilla essence and mix it well.
  • Now add maida, oats, coco powder, baking powder, baking soda, salt and choco chips knead into smooth dough. If the dough is dry add little milk, if its too sticky add some flour.
  • Preheat the oven @ 180 degree.
  • Divide the dough into 2 parts, and make 2 logs.
  • Place the logs in a baking sheet lined over a baking pan.
  • Bake it for 20-25 minutes.
  • Cool it completely and cut it diagonally as 1” pieces using sharp knife.
  • Bake it again for 5 minutes.
  • Flip the pieces and bake it again for 5 minutes.
  • Cool it completely and serve it with tea/coffee.







NOTE
  • I replaced the melted chocolate with Nutella.
  • Temperature may vary oven to oven.
  • Cool it completely and cut into pieces, else it may crumble.
