LEMON RICE I ELUMICHAI SATHAM I LUNCH BOX RECIPES

Hi friends, nowadays I will be cooking and posting for the events regularly, I don’t want to miss any event and other way is I will be routine in my blogging too… It keeps me active for regular. Likewise, today’s post for VT – Vegan Thursday which is the brainchild of Priya Suresh akka from Priya’s Versatile Recipes. And compulsory, you can expect vegan foods from our group of friends on every 1st and last Thursday… 


Coming to the recipe, I prepared simple yet delicious and favourite rice is none other than Lemon Rice/Elumichai Satham/Chitranna. It is tangy, mild spicy and flavourful rice. Potato fry, thovaiyal is best condiments of the rice.


Lemon rice which will prepare in the temple always will be best in taste and flavour and I love to have Kovil Lemon rice, usually in temple giving the lemon rice, sweet pongal or tamarind rice as Prasadham after god’s prayers.  I used to buy lemon rice with potato fry and mango pickle in nearby shop of my college during college days for my lunch.

INGREDIENTS
Oil – 2 Tbsp
Chana dal – 2 Tsp
Urad dal – 2 Tsp
Mustard seeds – 2 Tsp
Peanuts – 1 Tbsp
Dry red chillies – 3-4
Green chillies – 4-5
Curry leaves – Half Handful
Ginger – 2 Tsp Chopped
Hing – 1 Tsp
Lemon juice – ¼ Cup (Squeezed from 3 Medium Lemon)
Turmeric powder – ½ Tsp
Salt – To taste
Cooked rice – 3 Cups or Adjust while mixing.


METHOD
  • Mix the lemon juice and turmeric together and keep it aside.
  • Heat oil in a pan add chana dal and urad dal when it starts browning add mustard seeds and wait for splutter.
  • Then add skinned peanuts and dry red chillies saute it, till the dals turns golden brown.
  • Now add green chillies and curry leaves saute it once.
  • Pour the lemon and turmeric juice and add enough salt and allow to boil, it takes around 2-3 minutes.
  • Switch off the flame and add cooked rice little by little and mix it well.
  • Serve it hot with carrot beans poriyal and Mint chutney. 




NOTE
  • Adjust the lemon juice according to your rice.
  • You can add shallots while adding green chillies, it gives unique taste but its shelf life is low. It can be consume in a same day.
  • You can store the lemon rice for 2-3 days.
