started to post the diwali recipes, especially sweet items... Yayy!! Am very
much excited to post diwali recipes, as this is my second diwali after started
the blog, last year too I made many varieties of sweets like Corn
flour Halwa in MW oven, Rasgulla,
Rasmalai,
Gulab
Jamun and Kaju
Flower, and all...
This time too I
have listed my to-do sweets, hope I will do my level best. One side is very
happy to try out the delicious sweets but other side of my heart is beating
fast as am going to gain more calories and fatsL... So I have to prepare myself to control my diet too.. Its really
difficult, but let’s hope for the best..;)
Actually, the carrot
halwa was in my draft till yesderday, now time to taste it... I am not fan of
carrot but want to give a try and not bad it came out really well. Prepare the
yummy carrot halwa for your diwali and enjoy it...

INGREDIENTS
Peeled and grated Carrots
– 1 ½ Cup packed
Ghee/Clarified butter
– 1 + 1 Tbsp
Boiled milk – 1 ½ Cup
Orange Food Color – A
pinch (Optional)
Sugar – ¼ Cup
Cardamom powder – 1 Tsp
Chopped Pistachios –
1 Tbsp
METHOD
- Heat ghee in a pan, add grated carrot and sauté it well on low – medium flame for 10 minutes or until the moisture content of carrot evaporates. In this stage the carrot color will be change into pale orange and it will be tender.
- Take one Tbsp of milk separately and add food color to it, pour remaining milk to the carrot and allow cooking on low-medium flame till the milk absorbs, this will take about 8-10 minutes.
- Now add sugar to the mixture and stir it well, add cardamom powder and 1 Tbsp of ghee sauté it for other 4-5 minutes or till the halwa starts to leave the side of frying pan. Switch off the flame.
- Transfer this into the ghee greased pan and flat it using ladle or glass garnish with chopped pistachios, cool it for 10-15 minutes cut into your desired shapes.
- Take the each piece carefully and serve it warm or chilled.
NOTE
- You can use full cream milk for rich flavour.
- Adjust the sugar content according to your sweetness.
- Food color is completely optional.
- You can serve the carrot halwa in the bowl too instead of making pieces.
- If you wish add ghee roasted cashews and raisins to the halwa.
