PAAL KOVA I MILK HALWA I THIRATU PAAL I DIWALI SWEETS

Hi friends, till today am successfully posting the diwali recipes, I want to give fully sweet recipes but I decided to make some savouries also. Will try some recipes and will post soon...



Last friday, I prepared the paal kova... As I already said, I love milk sweets very much and the top most favourite is the Paal kova. I prepared in traditional way which is time consume process but when you see the good outcome, you will be double triple happyJ


I prepared in small quantity, you needs only two ingredients for the special paal kova other ingredients are optional. At the end of the process, you will smell good aroma of the good grainy paal kova.

INGREDIENTS
Milk – 1 liter
Sugar – ½ Cup
Cardamom powder – 1 Tsp


METHOD
  • Take a heavy bottom pan and pour the milk.
  • Boil it on medium-high flame, when its boiling keeps the flame on low.
  • Allow boiling for 1- 1½ hour keep stirring every 5 minutes. Inner side of the pan covered with creamy layer, scrap the creams into the milk.
  • Now the milk will be reduce into half quantity and the color will be change into pale yellow color.
  • This is the time for non-stop stirring till the final process else the milk will burn and the total milk will be spoils.
  • When it starts thickening i.e. you can see grain on the milk layer as shown in the picture.
  • Add sugar to the milk and keep stirring, don’t leave stirring and scrap the sides of the pan often.
  • Now it will look like watery, don’t worry its because of the sugar melts, keep stirring.
  • After 15-20 minutes, it will be good thickening and looks in grainy texture.
  • Switch off the flame and transfer into a greased tray, if you want you can make cut in your desired shape.
  • Cool it completely and store it in air-tight container in refrigeration.



NOTE
  • Use full cream milk to get even more rich flavour.
  • Add chopped almonds, pistachios into the paal kova in last stage.
  • Sugar adding step is important; don’t add sugar before the milk solidification.
  • You can make khoya/mawa using the same procedure without adding sugar in it.
