DARK DATES CHOCO CAKE - EGG FREE BUTTER FREE

Hi dear friends, for past one week I didn't cook anything for my blog, as am posting these recipes from my drafts... I wish to post the dark dates cake for long time but I forgot to share. As many of my friends and regular readers knows that am poor eater as I already said in my posts. So nowadays my mind insisted to have healthy items, and now hearing the voice of my mind and obey its order..;) I tasted the dates once or twice in my lifetime, because I don’t like. Here is I have prepared cake with dates, which is very delicious and no one can say it contains dates in it.  


This is my first try with dates and bakes...;) Am happy that my experiment was came out very well and the taste was tremendous. Everyone at my home enjoyed, and I had few pieces for the photographs... ;) The color of the cake will be very dark brown, because, I used light brown sugar, dark dates with coco powder, so it will be in good dark... Am sure you too love the combo of chocolate and dates. Do try once and let me know your feed backs.

INGREDIENTS
Deseeded Dates – 12-15
Warm Milk – ½ Cup
Light brown sugar – ¾ Cup
Olive Oil – ½ Cup
Vanilla Essence – 1 Tsp
Maida – 1 Cup
Baking powder – ½ Tsp
Baking soda – ½ Tsp
Coco powder – 2 Tbsp
Chocolate chips – 2 Tbsp


METHOD
  • Preheat the oven @ 180 degree centigrade for 10 minutes.
  • Soak the deseeded dates in warm milk for 15-20 minutes.
  • Meanwhile sieve the maida, baking powder, baking soda and coco powder and keep it aside.
  • Now blend the dates and milk mixture into smooth.

  • Take a wide mixing bowl, add light brown sugar and olive oil mix it well, following by add vanilla essence and stir it.
  • Now add dry ingredients little by little and fold it in one direction.
  • If the batter is very thick add little amount of milk to get the cake batter consistency.
  • Pour the batter in non-stick cake pan or greased cake pan, and topped with choco chips and bake it for 25-30 minutes.
  • Insert toothpick, if it come out clean the cake is ready.

  • Cool it completely and slice it.
  • Enjoy your cake with Tea/Coffee/Shakes.




NOTE
  • You can substitute light brown sugar with white sugar or honey.
  • You can add your choices of nuts instead of chocolate chips.
  • Baking time may vary oven to oven.
  • Adjust the milk according to your batter consistency.
