friends, poori is very famous Indian fried puffed bread. I already posted atta
poori and beetroot
poori recipe. Do you hear about potato poori?? The boiled and mashed potatoes knead with
flours and deep fried the pooris. I love poori all the time, it never bored of
me at any cost. But, nowadays I won’t prefer to make often due to high calorie
intake.
Making
poori is very easy if you knead the dough in correct consistency. Poori dough
should be little tight rather than soft as chapathi dough. When we fry the soft
dough it will drink some oil and won’t puff and final result will be flat poori

but you knead the dough little tight and deep fry, it will come up to see your
smile. J
The
potato poori is interesting and slightly differs in taste while compared to our
normal poori. But the taste was really
superb. I tried the recipe from mobile App. The potato poori is mixed of maida,
whole wheat flour, gram flour, dash of spices and mashed potatoes. The best accompaniment
for the poori is tomato
thokku and coconut chutney.

INGREDIENTS
Whole
wheat flour – ¾ Cup
Maida/APF
– ¼ Cup
Gram
flour/Besan flour – ½ Cup
Potatoes
– 1/3 Cup (Boiled and Mashed)
Hot
oil – 3 Tbsp
Garam
masala – ½ Tsp
Salt
– ¾ Tsp
Water
– To knead
Oil
– To deep fry
METHOD
- Take a wide mixing bowl, add all the flours, potatoes, hot oil, garam masala, salt and mix together. The potatoes comes into contact with salt in the mixture, they give out moisture which makes the dough softer.
- Add just enough water to make firm dough.
- Keep covered for 15 minutes.
- Divide into 12-15 balls and roll out into thin circle.
- Heat oil in pan in medium flame.
- Then put the rolled dough into the hot oil carefully.
- Deep fry in moderately hot oil, till golden brown on both sides.
- Keep it in absorbent paper and serve it hot the puffed pooris with tomato thokku and coconut chutney or any dish you like.
NOTE
- Consistency of the dough is important.
- Don’t add much potato, it will be drink oil.
- You can add ½ Tsp chilli powder with garam masala powder to enhance the flavor.
