Hi friends, I have
prepared the delicious instant kheer/payasam in healthy manner. I have used in
our traditional method, of using jaggery and coconut milk which will give
unique and authentic flavor to our taste buds. Compared to cow’s milk payasam,
the coconut milk payasam will always take first priority in our family; I hope
you too love the flavor. Samba wheat will always gives extra taste and nutritious
in it. I do not have wheat rava as upma or in any other spicy taste but when it
comes as sweet recipe, Yes! I never forget to taste the recipe… Its one of my
favorite paysam and here is the recipe…

INGREDIENTS
Coconut, scraped – 1 Cup
Water – 1- 1½ Cup + 3 Cup
Ghee – 1 Tbsp
Cashew nuts – 10-12
Raisins – 10-12
Samba wheat rava/Wheat
semolina – ½ Cup
Homemade Jaggery syrup –
½ Cup (Recipe Soon)
Cardamom powder – 1 Tsp
Salt – 1/8 Tsp
METHOD
- First extract the coconut milk with water and keep it aside.
- Add ghee in pan; roast the cashew nuts and raisins one by one and keep it aside.
- In the same ghee, add wheat rava and roast it till golden brown or nice aroma comes and keep it aside.
- Boil the 3 cups of water, and add the roasted rava and cook it for 3-5 minutes.
- After its cooked, add jaggery syrup and mix it well on low flame.
- Add cardamom powder and salt stir it well and allow cooking for 2 more minutes.
- Add roasted cashew and raisins and then switch off the flame.
- After 10 minutes add the coconut milk and stir it well and pour into serving bowl.
- Serve it hot…
NOTE
- You can substitute jaggery and coconut milk with sugar and cow’s milk.
- If you are using cow’s milk, cook the wheat rava in milk instead of water to get rich flavor.
- Salt will enhance the sweet flavor.
- While the kheer gets cool, it will be thickening, so when you serve add little coconut milk to get the flowing consistency and stir it once and serve.
