CHECKER BOARD COOKIES

Hi friends, after strawberry nutella thumbprint cookies, I tried Checker board and pinwheel cookies for HBC, now I posting checker board cookies, later will post the pinwheel and sandwich cookies…


I really love to experiment the cookies and am happy that taste was too good and somehow the texture and shape were good to see…

I baked the checker board and pinwheel cookies at same time, that I divided the whole dough and prepare the two cookies…

INGREDIENTS
All-purpose flour – ¾ Cup
Baking powder – ¼ Tsp
Salt – 1/8 Tsp
Unsalted softened butter – ¼ Cup
Granulated sugar – 6 Tbsp
Vanilla extract – 1/2 Tsp
Unsweetened cocoa powder – 2 Tbsp 


METHOD
Vanilla Dough
  • Sift together the flour, baking powder and salt. Set aside.
  •  In a mixing bowl beat the butter and sugar until light and fluffy. Add vanilla extract and beat again until blended.
  •  Add the flour mixture slowly, beating just until combined.
  • Remove half the dough and set aside.


Chocolate Dough
  • Add  coco powder with other half dough and knead it well.
  • Make disc the doughs and cover it with plastic cling film and refrigerate for 30 minutes.
  • Preheat the oven 350 F/ 180 C.


Making checkerboard shape
  • Divide the vanilla and chocolate doughs each into 2 pieces. Roll each piece into a 6 inch log, and then press each log into a 1 ½ inch thick square shape. Quarter the squared off logs lengthwise with a knife.
  •   Layer 2 strips of vanilla and 2 strips of chocolate dough into a checker board pattern and squeeze together gently to adhere.
  • Wrap the dough tightly in plastic wrap and refrigerate until firm, about 1 hour.
  • Slice each log into ¼ inch thick cookies.



Baking
  • Bake it for 9-12 minutes. Cool it on wire rack.
  • Ready to eat!!!





NOTE
  • You can use any food colors instead of vanilla or both.
  • The original recipe asked to add melted semi-sweet chocolate but I din’t have at my pantry at the time, so I added 2 Tbsp of coco-powder.
  • Refrigeration is must, please don’t avoid this one.
