The gothumai/wheat flour roti is very easy to prepare and it tastes so good with the flavour of shallots. Shallots have anti-oxidants and it's very nutritious, and I love shallots more than onions, so I have added a little more.

INGREDIENTS
Wheat flour – 1 ½ Cup
Shallots, chopped – ½ Cup
Cumin seeds – 2 Tsp
Black peppercorns, coarse powder – 2 Tsp (I used mortar & pestle to grind)
Dry curry leaves – Few
Salt – To taste
Olive oil – 2 Tsp
Sugar – 2 Tsp (Optional)
Water – To required
METHOD
- Take a wide bowl add all ingredients except water.
- Mix it well with hands and add water little by little and knead into a smooth dough.
- The dough should not be very hard, else after cook it will become harder.
- Divide the dough into medium equal balls.
- Heat dosa tawa on medium-high flame.
- Take a plastic sheet and keep it in the sheet, wet your hand and press into a circle or cover with other plastic sheet and press into a circle.
- Now gently remove the roll from the sheet and put it on tawa.
- Sprinkle drops of oil and cook it on both sides.
- Serve it hot…
NOTE
- You can add chopped green chilies instead of peppercorns.
- Add the coriander and mint leaves to get flavorful roti.
- You can add onions instead of shallots, but I recommend trying with shallots which taste better than an onion.
