I thought to make some special dessert to start the year. Yesterday night, I had idea of to prepare carrot kheer, and morning I directly enter to +Divya akka's space, because I already noted her version and it was appealing kheer. No further delay, I prepared the yummy and delicious kheer... Thank u so much Divya aks for the wonderful recipe... Its really good healthy and kids friendly, even for poor eaters like me...:P But I don't have condensed milk, but its other chance to make homemade condensed milk in jiffy and used it here...

INGREDIENTS
Carrot
– 1 Large
Ghee
– ½ Tsp
Vermicelli
– 3 Tbsp
Boiled
Milk – 2 Cup
Cardamom
powder – 1 Tsp
Sugar
– 1 ½ Tbsp
Homemade Condensedmilk – 3 Tbsp
Almonds
and Pistachios – 2 Tbsp
METHOD
- Wash, peel and diced the carrot, cook the carrot with immersed water till soft or 5-10 minutes, cool and make puree with the cooked water. Keep aside.
- Heat ghee in pan; add vermicelli roast it slightly till golden brown.
- Now add milk to the vermicelli, and allow cooking for 5 minutes.
- Then add carrot puree, mix it well and allow boiling for 3-5 minutes.
- Add cardamom powder, sugar and condensed milk stir it well, let it boil for 2 minutes and switch off the flame.
- Garnish with chopped nuts with hot or cold.
NOTE
- You can use semolina or boiled sago pearls instead of vermicelli.
- Use 2 saffron strands soaked in milk instead of cardamom flavor.
- If you wish, add dash of orange food color.
- Use ghee roasted cashew nuts and raisins instead of almonds and pistachios.
