Hi friends, Chayote squash or chow-chow
chutney is new to our menu… Its healthy and easy to make and simple side dish
for idli/dosa. We usually used the chow-chow for making sambhar or kootu, but
chutney is very rare, even I didn't think to make chutney with the veggie.
No need to add coconut to the chutney. It
blends with tomato and chana dal and urad dal, give unique taste and we loved
it with ragi dosa too…

INGREDIENTS
Chow-Chow/Chayote Squash – 1 Medium
Oil – ½ + 2 + 1 Tsp
Channa dal – 1 Tbsp
Urad dal – 2 Tsp
Dry red chillies – 6 or adjust
Hing – ¼ Tsp
Tomatoes – 2, diced
Salt – To taste
To Temper
Oil – 1 Tsp
Urad dal – ½ Tsp
Mustard seeds – 1 Tsp
Dry curry leaves – Few
METHOD
- Wash and peel the chow-chow, grate it and keep it aside.
- Add ¼ Tsp of oil, add chana dal, urad dal, red chillies and hing and roast it till golden brown and cool it aside.
- In the same pan, add 2 Tsp of oil add grated chow-chow and sauté it for 5 minutes or till the water content reduced.
- Then add tomatoes with salt and sauté it for 4-5 minutes and switch off the flame and cool it completely.
- Take the dal and chillies in a blender and pulse it once to make coarse powder, then add chow-chow mixture and blend it coarse paste without adding water and transfer into to a bowl.
- Then do tempering and pour it to the chutney.
- Serve it with Idli/Dosa…
NOTE
- You can add 4-5 shallots, before adding grated chow-chow.
- You can replace dry red chillies with green chillies too.
