Kheer/payasam is all time favourite and
who can say “NO” to the yummy healthy kheer varieties. Festivals are on the
queue one by one, to taste more varieties of dessert, isn’t? I prepared the
kheer recipe for SNC. I love the event much more and thoroughly enjoyed and
learnt so many recipes from other sides of India from beginning of the event.
But its our last month challenge and we giving send off to my lovable event
with kheer. Thank you so much +Divya Pramil, I learnt a lot of recipes and got good
friends through the event…
Gavachi Kheer is famous Maharastrian
kheer which is mainly prepared for Ganesh Chaturti. The recipe was challenged
by +Manjula Bharath from Desi Fiesta. The kheer prepared from whole wheat berries, which
gives unique taste to the kheer and we enjoyed it a lot, actually I tasted
similar kheer in one famous hotel sree anna poorna, Coimbatore. Long time, I
searched for the recipe, somehow I couldn’t get the exact taste, but now I got
it… Yeah!! Am so happy and tempted to taste the kheer and am sure its my top
most favourite kheer from now on… J Very healthy
kheer with the combination of wheat, rice, jaggery with milk. The gavachi kheer
tastes very delicious and creamy and I enjoyed it a lot.

INGREDIENTS
Whole wheat berries – ¼ Cup
Raw rice – 2 Tbsp.
Ghee – 2 Tbsp.
Cashew nuts – 10-12
Raisins - 10
Water – 1 ½ Cup
Boiled Milk – 1 ½ Cup
Cardamom powder – ½ Tsp
Jaggery, grated – ¼ Cup + 2 Tbsp. Water
METHOD
- Wash the wheat berries for 3 times and soaks the wheat berries for at least 8 hours or overnight.
- Wash and soak the rice for 15 minutes and drain it and keep it aside.
- Now drain the wheat berries and grind it into coarse paste with little spread of water, it will look like gum pastes no worries, go ahead.
- Heat ghee in pan, add cashew nuts and raisins roast it till golden brown and take it out and keep it aside.
- Now add the ground wheat and sauté it well on very low flame for 2-3 minutes or you get nice aroma from it.
- Add water and soaked rice to the mixture and mix it well without any lumps, if you see many lumps mash it with masher and keep the flame to medium-high.
- After the mixture boil, add the boiled milk and allow cooking on medium flame till the mixture gets cooked well.
- Add cardamom powder to it and mix it well, after cooked well switch off the flame and let it be in rest for 10-15 minutes.
- Now melt the jaggery pieces with little water, filter the syrup and pour into the kheer mixture, mix it well.
- Add roasted cashew nuts and raisins stir it once and serve it hot…
NOTE
- You can add milk in place of water; it will be so creamy and tasty.
- Roast the wheat very carefully on low flame, if it’s too dry spread some water and roast it.
- You can use wheat rava for quick version instead of whole wheat berries but I recommend trying once with wheat berries, which gives unique taste.
