Again come up with millet recipes.. Kesari is my family favorite, so whenever we crave for sweets, immediately prepare some kesari with semolina/rava or vermicelli... But today, I have tried my favorite sweet with millets, Yes! I have prepared the kesari with varagu, samai and thinai millet. Super combination and very tasty kesari.
Making the kesari with millet is my long time wish, but now only I got time to do it. I strongly, recommends to you, try at once, you will love it. The taste is quite unique compared to rava kesari but am sure it will be more delicious.

INGREDIENTS
Varagu/Kodo millet - 1/4 Cup
Samai/Little millet - 1/4 Cup
Thinai/Foxtail millet - 1/4 Cup
Sugar - 3/4 Cup
Ghee - 2 Tsp + 2 Tbsp
Cashew nuts - 10-12
Oil - 3 Tbsp
Salt - A pinch
Water - 3 Cup
Food color - 1/8 Tsp
METHOD
NOTE
Samai/Little millet - 1/4 Cup
Thinai/Foxtail millet - 1/4 Cup
Sugar - 3/4 Cup
Ghee - 2 Tsp + 2 Tbsp
Cashew nuts - 10-12
Oil - 3 Tbsp
Salt - A pinch
Water - 3 Cup
Food color - 1/8 Tsp
METHOD
- Heat 2 Tsp in pan, add the millets and roast it till aroma comes and cool it completely.
- Blend it in mixer grinder into coarse powder, like rava consistency and keep it aside.
- Boil 3 cups of water with food color.
- Then, add remaining 2 Tbsp ghee in the pan, roast the cashew nuts into golden brown and take it out and keep it aside.
- Now add the millet rava into the ghee and mix it once then pour the boiling water to the rava and keep stirring with laddle to avoid lumps.
- If you see the lumps, break it with laddle and add salt and cardamom powder.
- When the rava mixture gets thicker, add sugar and stir it well for 3 minutes.
- Then add the oil to the mixture and keep stirring on low-medium flame, till the mixture leaves side of the pan.
- Switch off the flame, add the roasted cashew nuts and cover it with lid for 5-10 minutes.
- Serve it hot...
NOTE
- You can use any one millet also in the same style.
- To healthier version, I have added oil instead of ghee, if you like ghee add it.
- After grind the roasted millets, I got 1 Cup rava, so added 3/4 Cup sugar and its correct sweetness, if you prefer more sweetness add 1 Cup sugar.
- Pour boiling water over the mixture, will help to cook soon and prevents lumps.
- Food color is optional. You can add saffron soaked milk for the color too.
- Add boiled milk instead of water to get rich taste.
