INGREDIENTS
Olive
oil – ¼ Cup
Sugar
– ¼ Cup
Salt
– Pinch
Vanilla
essence – 1 ½ Tsp
Cinnamon
powder – ¼ Tsp
Coffee
powder – ¼ Tsp
Chocolate
chips – 2 Tbsp
APF/Maida
– ½ Cup + 2 Tbsp
METHOD
- Melt chocolate chips in double boiler or microwave for 30 seconds, and keep it aside.
- Take a mixing bowl; add sugar and oil beat it well.
- Add coffee powder, cinnamon powder, and salt then mix it well.
- Then add vanilla essence stir it once.
- Add the melted chocolates into the wet mixture and then add maida and knead it well.
- If the dough is sticky, keep it in refrigeration for half an hour.
- Preheat the oven at 180°C for 10 minutes.
- Take equal size balls and press it in-between your palms to shape circle.
- Arrange it in baking tray and bake it for 14 minutes.
- Cool it completely and serve it… J
NOTE
You
can use powder sugar instead of granulated sugar.
You
can use softened butter instead of olive oil for vegetarian version.

i've made cookies with olive oil once and the taste is different from the usual butter cookies, nonetheless, tasty it looks... :)
