Hi friends, am really happy to share the different recipe for the special event Shhhhh Cooking Secretly Challenge is brainchild of +Priya sis of Priya’s Versatile Recipes and Cook N Click.
She has announced the interesting event last month in FB group. The concept of the challenge is to exchange two secret ingredients between the pair through mail or chat, so we can get new friends too and they should cook with either one or two secret ingredients. The prepared recipes will be post on 16-18th of each month, till then you have be Shhhhh Yes! you should keep your ingredients secretly till you post it. Sounds interesting, isn't?

My first partner of the Shhhhh event, sangee aks.  And we were very happy, and excited J She gave me two secret ingredients, and they are Foxtail Millet/Thinai and Corn flour. When she given the ingredients, I have no clue what to prepare and suddenly bake, strikes in mind. So, I was stick on bake and even my first trial of the cake with the millet ends up with error L but I never give up and I want to do it successfully. +Sangee aks supports me well and love the challenge with her and Thanks Sangee aks...J

So here is the recipe of foxtail millet chocolate cake and I used both my secret ingredients. And I am very happy that I got good texture of cake with superb taste. Really I loved the healthy cake and try it once and give me your feed backs too… The cake will brittle if the millet flour is not fine powder while slice it.

INGREDIENTS
Whole wheat flour – ¼ Cup
Foxtail Millet/Thinai flour – ¼ Cup 
Corn flour – 2 Tbsp
Cocoa powder – 1 ½ Tbsp
Baking soda – ½ Tsp
Baking powder – ½ Tsp
Olive Oil – 2 Tbsp
Jaggery, grated – 2 Tbsp
Honey – 2 Tbsp
Milk+Vinegar – 3 ½ Tbsp + ½ Tbsp
Vanilla essence – ½ Tsp
Cashew nuts, broken – 2 Tbsp

METHOD
  • Sieve the wheat flour, millet flour, corn flour, cocoa powder, baking powder and soda.
  • Preheat the oven @ 180°C for 10 minutes. Grease the cake pan with butter and dust with pan or layered with parchment paper.
  • Take a mixing bowl add olive oil, grated jaggery mix it well then add honey and vanilla essence mix it well.

  • Now mix the flour and milk mixture alternately till combined well into thick batter consistency.
  • Add half of the flour then 1-2 Tbsp of milk mixture fold it then add flour and milk mixture fold it gently.

  • It should be like semi thick consistency, idli batter consistency.
  • Pour into the cake pan, topped with nuts and bake it for 20-25 minutes.
  • Cool it completely and slice and serve it.

NOTE
  • Millet flour should be fine powder.
  • Don’t cut the cake in warm state, it will brittle. (I did the mistake in the cake without patience)
  • Substitute the jaggery with white sugar or brown sugar. 
  • Add butter milk instead of milk + vinegar mixture.
  • Use your wish of nuts for toppings.
